{"id":45,"date":"2011-10-23T19:25:18","date_gmt":"2011-10-23T19:25:18","guid":{"rendered":"http:\/\/www.cooks.stierbach.atlantia.sca.org\/?p=45"},"modified":"2011-10-23T19:25:18","modified_gmt":"2011-10-23T19:25:18","slug":"egurdouce","status":"publish","type":"post","link":"http:\/\/www.cooks.stierbach.atlantia.sca.org\/?p=45","title":{"rendered":"EGURDOUCE"},"content":{"rendered":"<p>Adapted from the book: Flans and Wine: a Benedictine recipe book from Evesham Abby by Brother William.<\/p>\n<p>2 or more pounds of beef, cut up small, about \u00c2\u00bd inch square<br \/>\n2 TBS of olive oil or butter<br \/>\n\u00c2\u00bc cup of currants<br \/>\n1 \u00c2\u00bd cup of red wine<br \/>\n\u00c2\u00bd cup of wine or cider vinegar<br \/>\n\u00c2\u00bd cup of sugar<br \/>\n\u00c2\u00bd tsp each of ginger and cinnamon<br \/>\n\u00c2\u00bc tsp of black pepper<br \/>\n1 tsp of salt to taste<br \/>\n2 TBS of breadcrumbs<\/p>\n<p>Brown the meat in the oil. Add the rest of ingredients except breadcrumbs and simmer for at least one hour preferably two. Add breadcrumbs to thicken and serve.<br \/>\nNOTES: the orginal receipe called for 2 to 3 white onions cooked whole then chopped. I found this very difficult and recommend chopping the onions, cooking in boiling water for 3 minutes, draining and then adding to the stew with the rest of the ingredients.
